How to Make Zucchini Noodle Roll-Ups

Use the steps and photos below to guide you when making our Cheesy Zucchini Noodle Roll-Ups recipe.

Step 1

Make the cottage cheese filling as per the recipe.

Step 2

Use a hand-held slicer or mandolin to cut 24 very thin slices of zucchini, each about 2” to 2 1/2” wide, and 9” to 10” long.

Step 3

Stack two of the zucchini slices on a work surface. Set 2 Tbsp. of the filling at one end of the zucchini.

Step 4

Roll the stacked zucchini slices into a cylinder. Stack, fill and roll up the remaining zucchini slices as you did the first two. You should end up with 12 zucchini noodle roil-ups.

Step 5

Mix and spread passata and water in a 13” by 9” baking dish, set in zucchini noodle roll-ups, leaving a bit space between each one.

Step 6

Make white sauce as per the recipe.

Step 7

Spoon a generous amount of white sauce on each zucchini noodle roll-up.

Step 8

Sprinkle zucchini with 1/4 cup freshly grated Parmesan cheese. Now bake, uncovered, 25 minutes, or until zucchini is tender and light golden on top.

Step 9

Sprinkle zucchini with chopped parsley and serve.
