How to Make a Mediterranean Style Cheese Log

Put a flavourful Mediterranean spin on the classic cheese log!

Step 1:

Place 2 (250g) bricks cream cheese, at room temperature, in a bowl. Beat until smooth. Finely chop 1/4 cup pitted olives, 8 sun-dried tomatoes, 1 garlic clove and 2 Tbsp. fresh oregano or basil. Mix them, and chili flakes, to taste, into the cheese

Step 2:

Line a baking sheet with plastic wrap. Lightly dampen your hands with cold water. Form cheese mixture into a 9” long log, set on baking sheet, and refrigerate 20 minutes. Note: If desired, the cheese mixture could be divided and shaped into 2 smaller logs, and then coated.

Step 3:

Finely crush ⅓ cup (60g) unsalted, shelled pistachios (or walnut halves) and set on a wide plate. Mix in ⅓ cup freshly grated Parmesan cheese. Roll cheese log in nut mixture, pressing it on to help it adhere. Wrap log in plastic wrap and refrigerate until needed. Log can be prepared a day before serving, with crackers and fruit.
