Slice off the rind from the top, bottom and sides of your 200g wheel of Brie or Camembert while the cheese is still cold and firm. Discard the rind. Cut the cheese into cubes and place in a mixing bowl to soften to room temperature, about 30 min.
Use an electric mixer, on low speed, to whip the cheese just until creamy, scraping down the sides of the bowl as needed.
Scrape the whipped cheese into a serving bowl. Sprinkle with toppings, if desired. Try this combination: toasted walnut pieces, fresh thyme leaves, drizzle of honey. Serve with crackers, crostini or fresh veggies.
