How To Make Flavoured Sugar

Flavoured sugars make a nice culinary gift and can be used in many sweet ways.

Mango Coconut Sugar

Thickly slice 5 strips dried mango (see Note) and set in food processor with 1/4 cup shredded coconut and 1 cup sugar. Pulse until mango is finely chopped. Use this sugar to flavour fruit salads, baked pineapple rings, banana loaf or muffins, and scones.

Citrus Sugar

Use a zester to remove 1 Tbsp. zest from a lime, lemon and grapefruit. Finley chop zest and place in a shallow bowl. Mix in 3/4 cup sugar (see Note). Let sugar sit uncovered 2 hours to dry; transfer to a tight-sealing jar. Use citrus sugar in place of plain sugar in baking, sprinkle on cookies, or stir into hot or iced tea.

Pumpkin Spice Sugar

Combine 1 cup sugar, 1/2 tsp. cinnamon (see Note), 1/4 tsp. nutmeg, 1/4 tsp. ginger, 1/8 tsp. allspice and 1/8 tsp. cloves in a bowl. Transfer to a tight-sealing jar. Use sugar to flavour pie fillings, crumble toppings, cookie dough, oatmeal and lattes.
