How To Make Gouda Cheese Sauce

Spoon this tangy sauce over cooked vegetables, such as asparagus, broccoli and cauliflower; or fish, such as cod; or use for macaroni and cheese.

Step 1

Melt 3 Tbsp. butter in a medium pot set over medium heat. Mix in 3 Tbsp. all-purpose flour and stir 2 minutes, until this roux is well blended.

Step 2

Whisk 1/2 cup of warm milk into the roux and cook until mixture is thick. Slowly whisk in another 2 cups of warm milk. Bring to a simmer and cook the sauce, stirring frequently, a few minutes to thicken. Now turn the heat to low.

Step 3

Gradually stir in 150 to 175 grams grated Gouda cheese. Season sauce with salt and white pepper and, if desired, a pinch of ground nutmeg, and it’s ready.
