Cooking on a Cedar Plank

Cooking fish and other foods on a cedar plank imparts and exudes a wonderful smoky taste and aroma.

Step 1

Buy untreated cedar cooking planks in our Seafood Department. To ensure they do not quickly ignite when set on the grill, soak, completely submerged in water, for at least 2 hours

Step 2

Dry one side of the plank and set on the food on you want to cook. In this example, 4 (150 g) salmon fillets, seasoned with salt and pepper, and marinated 20 minutes in a mixture of 2 Tbsp. honey, 1 Tbsp. Dijon mustard and 1 Tbsp. lemon juice, was used.

Step 3

Preheat barbecue to medium-high (about 400˚F in the chamber). Set plank(s) on one side of the barbecue. Turn heat underneath the plank(s) to low and leave the other side set at medium-high. To cook salmon fillets, close the lid and cook 15 to 18 minutes, or until just cooked through. (Keep a spray bottle of water handy in case the board ignites.)

Note: Beyond seafood, other foods, such as chicken wings, marinated or stuffed vegetables or potatoes, could also be cooked on a cedar plank. Cooking times will vary.
