Preheat your deep fryer to 325 degrees F. Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper and set aside. Prepare the batter by whisking the first 6 ingredients together in a bowl. Mix in the water until just combined. Let the batter sit 5 minutes. Place the lime juice in a second bowl. Slice the bananas, diagonally, into 1-inch thick pieces and toss them in the lime juice to coat.
Spoon the banana pieces into the bowl of almond batter and gently mix to coat, ensuring each piece is nicely coated. Working in batches, deep fry the bananas until golden brown, about 3 to 4 minutes. Drain well on paper towel, transfer to the baking sheet and keep warm in the oven while the rest are being fried. Divide the bananas among 4 plates and drizzle with honey.
Garnish with a dallop of the whipped cream and mint sprig and serve.
