Place the almond beverage in a small pot. Sprinkle with the gelatin. Let stand 5 minutes, and then mix the sugar, vanilla, cornstarch and spices into the pot. Place the pot over medium heat and bring the mixture to just below a simmer, stirring occasionally to dissolve the sugar and gelatin into the liquid. Divide and pour the mixture into 4 (6 to 8oz.) heatproof decorative glasses or bowls. Cool to room temperature. Cover and refrigerate until the panna cotta are set, about 4 hours, or overnight.
When ready to serve, place the fruit and maple syrup in a bowl and toss to combine. Spoon some fruit into the centre of each panna cotta. Garnish each panna cotta with a mint sprig and serve.

Serving Suggestions

For a more decadent dessert, serve the panna cotta with gluten-free cookies for dunking and, if desired, a glass of B.C. dessert wine to sip and enjoy with it.
