Method

Place the strawberries, sugar and orange juice in a bowl and toss to combine.
Cover and refrigerate until needed. Place the cream and vanilla in a second bowl and whip until stiff peaks form. Set the cake on a cake plate. Spread the cream on the top and sides of the cake. Coat the side of the cake with the toasted coconut. Serve slices of the cake with the strawberries.
