Preheat the oven to 350 degrees F. Lightly vegetable spray the bottom a 10-inch spring-form cake pan. Place the flour, baking soda, baking powder, salt, cinnamon and nutmeg in a bowl and whisk to combine. Beat together the oil, 2/3 cup brown sugar and white sugar in another bowl; mix in the eggs, buttermilk and vanilla. Mix the dry ingredients into the wet until well combined (batter will be very thick). Arrange the apples slices on top of the cake in a spiral-like fashion, pushing them partially into the batter. Sprinkle the apples with the almonds and the remaining 2 Tbsp. of brown sugar. Bake for 60 minutes, then insert a toothpick in the centre of the cake. If it
pulls out clean the cake is done; if not bake the cake 5-10 minutes longer. Cool cake a few minutes on a baking rack; unmould and serve warm.
