Preheat the oven to 375 degrees F. Combine the sugar and spices in a medium-sized bowl. Set aside 2 Tbsp. of this mixture in another, smaller bowl. To the medium-sized bowl add the bread, butter and lemon zest and toss to coat with the sugar mixture.
Place the lemon juice in a large bowl. Peel, halve, core and slice the apples. Coat the apple slices in the lemon juice. Grease an 8" x 8" baking dish with 2 Tbsp. of butter. Spread 1/3 of the bread cubes into the baking dish. Arrange half the apples on top of the bread. Top the apples with 1/3 more of the bread. Top the bread with remaining apples. Top the second layer of apples with the remaining bread. Sprinkle with the apple juice and the reserved 2 Tbsp. of the sugar mixture. Cover with foil and bake for 40 minutes. Remove the foil and bake 10 minutes more, or until golden on top and the apples are tender.
Recipe Options: To make apple blueberry brown betty, replace half pound of the apples with 1 cup of fresh or frozen blueberries (do not thaw). For an even spicier betty, add pinches of ground cloves and dried, powdered ginger, along with the cinnamon and nutmeg.
