Preheat the oven to 375 degrees F. Line a shallow baking dish with parchment paper. Set in the chicken; season with salt and pepper. Bake for 25 minutes. While the chicken bakes, place the remaining ingredients in a small pot, bring to a simmer, and then remove from the heat. When the chicken has cooked 25 minutes, brush with half the maple mixture. Bake 10 minutes more, and then brush with remaining maple mixture. Bake an additional 10 minutes, or until the chicken is cooked through. Divide chicken among plates, spoon over pan juices, and serve.
