Preheat the oven to 350 degrees F. Heat the oil in a large skillet set over medium heat. Add the onion, celery and apples and cook until tender, about 5 minutes. Place the mixture in a large bowl, add all remaining ingredients and toss to combine. Pack the mixture into a buttered 9" x 13" baking dish. Cover and bake the dressing for 30 minutes. Uncover and bake 15 minutes more before serving alongside your roast poultry or pork.
Recipe Options: Use ripe pear in the dressing instead of apples. Use walnuts or toasted, slivered almonds instead of pecans. Turn this dressing into apple pecan stuffing by using it to fill the cavity of a turkey, chicken or Cornish hens before roasting.
