Place pineapple juice in a small pot and bring to a simmer over medium, medium-high heat. Reduce juice to an almost syrupy 1/3 cup. Cool reduced juice to room temperature. Place juice and remaining ingredients in a medium bowl and whisk to combine. Transfer dressing to a tight-sealing jar and refrigerate until needed. Will keep at least a week.

Serving Suggestions

This dressing, of course, could be used to dress a leafy green salad strewn with a mix sliced raw vegetables, such as celery, radish, cucumber, bell pepper and tomatoes. You can also use it to dress Asian-style noodle and rice salads.
The dressing could also be used as a dip for crudités - crisp, raw vegetables, trimmed and left whole, cut into sticks, and/or presented as florets. The dressing could also be used as a dip for grilled seafood, poultry, beef or pork, particularly those cooked on skewers.
