Combine the syrup and pinches cinnamon and nutmeg in a skillet. Mix in the apples, set over medium-high heat, bring to a simmer and simmer two minutes. Remove from the heat and reserve.
Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper. Combine eggs, milk, apple juice and ½ tsp. cinnamon in a large bowl. Dip and soak the bread slices in the egg mixture a few minutes. Preheat your electric griddle to, or set a large skillet over, medium to medium-high heat. Melt half the butter on the griddle or skillet. Cook six of the bread slices 3 to 4 minutes per side, or until golden brown, and then set on the baking sheet and keep warm in the oven. Melt the remaining butter on the griddle or skillet and cook the remaining bread. Plate the French toast and top with the maple apple mixture.
