Combine first 9 ingredients in a bowl. Refrigerate salsa until needed. Preheat oven to 425 degrees F. Place the snapper in a parchment paper-lined baking dish. Drizzle with 1 Tbsp. olive oil and 1 Tbsp. lime juice; season with salt and pepper. Bake 12 to 15 minutes, or until cooked through. Arrange 2 pieces of fish on each of 4 plates, top with salsa, and serve.
