Method

Preheat the oven to 425 degrees F. Place the snapper in a single layer in a lightly oiled, shallow baking dish. Combine the remaining ingredients, except the cashews and green onions, in a bowl, and then pour over snapper. Bake 12-15 minutes, or until cooked through. Place the snapper on dinner plates; spoon pan juices over top; sprinkle with cashews and green onions; and then serve.

Serving Suggestions

Serve this snapper with steamed rice and simple stir fry of snow peas, water chestnuts, red pepper and carrots flavoured with ginger and hint of soy sauce.
