Place oven rack in the middle position. Preheat the oven to 450 degrees F. Combine the first 4 ingredients in a large bowl. Cut each potato in half lengthwise. Cut each half into 6 lengthwise wedges. Place the potatoes in the bowl and toss to coat. Arrange them on a large, non-stick baking sheet. Bake in the oven for 20 minutes. Turn the oven to broil and cook until the potatoes are crispy on top, about 4-5 minutes.
