Method

  1. Place all ingredients, except berries, in a medium pot and whisk to combine. Bring to a simmer, and then add the berries. Return to a gentle simmer (it should just gently bubble) for 5 minutes, until the fruit softens, but still holds its shape.

  2. Cool compote to room temperature, place in a tight-sealing jar, cover, and refrigerate until needed. Compote can be refrigerated for up to 2 weeks.

Note: Serve this compote with a soft or creamy cheese, such as Brie or goat cheese. To make snacky bites, spread that cheese on crackers or toasted baguette slices, set on some of the compote, and enjoy.
