Place all ingredients, except berries, in a medium pot and whisk to combine. Bring to a simmer, and then add the berries. Return to a simmer, and gently simmer (it should just gently bubble) for 5 minutes, until the fruit softens but still holds its shape. Cool to room temperature, place in a tight-sealing jar, cover, and refrigerate until needed.
note: Any leftover compote can be refrigerated for up to 2 weeks.
