Place the rice, curry powder and stock in a pot. Bring to a boil over high heat, and then turn the heat to its lowest setting. Cover and cook until tender, about 15-18 minutes. Fluff the rice with a spoon; cool to room temperature. Place in a bowl, add remaining ingredients and combine. Chill well before serving.
