Place all ingredients in a medium-sized pot and mix to combine. Bring to a boil over medium-high heat, stirring occasionally. Reduce the heat to its lowest setting, cover and cook until the rice is tender, about 15 to 18 minutes. Fluff the rice with a spoon and serve.
Note: To toast the almonds, spread in a single layer in a baking dish. Bake in a 300 degrees F oven for 10 to 15 minutes, or until lightly toasted.
