Place the oil in a pot set over medium, medium-high heat. Add the onion, garlic and ginger and cook until softened, about 3 minutes. Mix in the rice and cook and stir 2 minutes. Add the remaining ingredients, except mint, and bring to a boil. Cover the rice, turn the heat to its lowest setting, and cook 15 minutes, or until the rice is tender. Fluff rice with a fork and then mix in the mint. Transfer to a serving dish and enjoy.
