Method

  1. Preheat barbecue to medium-high. Season chicken with salt and pepper. Lightly oil the grill. Grill chicken 2 minutes per side, or until exterior is nicely coloured. Move chicken to one side of the barbecue. Turn the heat off on that side of the barbecue; leave the other side at medium-high. Close barbecue lid and cook chicken, turning from time to time, for about 30 minutes, or until cooked through.
  2. While the chicken cooks, place jam, vinegar, zest, juice, soy sauce and ginger in a pot set over medium-high. Cook and stir until jam is melted and blended with other ingredients. Stir in blueberries and chopped mint; cover and reserve sauce on low heat.
  3. When cooked, arrange chicken on a platter, spoon over sauce, decorate with cheese, pumpkins seeds and mint leaves, and serve.
