In a double boiler heat sugar and wine over simmering water until sugar is completely dissolved. Stir in Certo. Carefully skim any foam that rises to the surface. Pour and seal in sterilized canning jars as per canning jar manufacturers instructions. Cool on racks and allow jelly to set 24 hours. Store in a cool, dark place until ready to open and serve.

Serving Suggestions

This preserve goes well with cheese, such as cheddar, blue and brie, and pate. Melted and brushed on near the end of cooking, it also makes a nice glaze for roast duck, pork loin and Cornish hens.
