Method

  1. Place the beef, onion and garlic in a small to medium pot and set over medium to medium-high heat. Cook and stir until the meat is entirely cooked through and crumbly.
  2. Drain away excess liquid from the meat, add then mix in the spices, tomato paste and stock. Bring to a gentle simmer, adjusting the heat until this is achieved. Simmer about 8 minutes, until the stock has reduced and the meat mixture is thick and tasty.
  3. Set a tortilla bowl on each of 4 plates. Divide and set lettuce in each bowl. Top the lettuce in each bowl with mounds of the avocado, corn, tomatoes and beans, making sure to leave a space for the beef.
  4. Spoon the warm beef into the space you left for it. Top each bowl with some cheese and garnish with lime wedges and cilantro sprigs. Serve tortilla bowls with salsa and sour cream.
