Preheat the oven to 425 degrees F. Place the pork in a roasting pan and sprinkle with salt and thyme. Roast 20 minutes. Place remaining ingredients in a pot over medium-high heat. Cook until the jam is melted and well incorporated with the other ingredients, then reserve on low heat. When the pork has cooked 20 minutes, reduce oven to 325 degrees F and brush pork with 1/3 of the glaze. Cook 10 minutes more, and then brush with 1/3 more of the glaze. Roast 10 minutes more, brush with remaining glaze, and cook 10-20 minutes more, or until internal temperature reaches 165 degrees F. Let rest 10 minutes before slicing thinly.
