Method

  1. Set an oven rack 6 inches below your oven's broiler. Preheat the broiler to high. Set the filone slices on a baking sheet. Broil the bread until light golden (keep an eye on them, as this won't take long). Set the crostini on a platter.
  2. Spread the top of each crostini with almond butter (or peanut butter). Now set a banana slice, kiwi slice, raspberry (or strawberry slice) and blackberry on each crostini.
  3. Drizzle the top of each crostini with a little maple syrup (or honey), sprinkle with a little toasted coconut, and then serve.
Note: To toast coconut, place it in a non-stick skillet and set over medium heat. Cook and stir the coconut until lightly toasted, about 3 to 4 minutes.
