Method

Place first 7 ingredients into a pot. Bring to a simmer and cook until vegetables are very tender, about 20 minutes. Puree soup in a blender or food processor, and then return to the pot. Add milk, salt and pepper. Heat through, and serve.

Serving Suggestions

Serve your favourite Alex Campbell Signature Series Brio Bread with this soup. For added texture, turn it into croutons by cutting some into small cubes and lightly toasting in olive oil in large skillet. Sprinkle a few croutons a top the soup just before serving.
