Method

Heat vegetable oil in a large skillet or wok over high heat. Add the ginger, garlic and onion and cook 30 seconds. Add the broccoli, peppers and onions and stir-fry 3-4 minutes. Gentle stir in tofu. Add sesame oil and water and cover and cook 2 minutes. Make a well in the centre and stir in teriyaki/cornstarch mixture and pepper and cook and stir until a sauce forms around the vegetables and tofu. Serve immediately.

Serving Suggestions

To complete this meal, serve the stir-fry on a bed of steamed rice or Asian-style noodles. For a more pungent sauce, substitute a 1/4 of the teriyaki sauce with black bean sauce. To make things spicy, mix in a little Asian-style chili sauce.
