Method

Set the oven rack 6 inches beneath your oven’s broiler. Preheat the broiler. Brush the pork chops with olive oil; sprinkle with sage, paprika, salt and pepper. Place in a broiler pan or baking tray. Broil 4 to 5 minutes per side, or until just cooked through. Serve the pork chops with a generous spoon of the applesauce alongside.

Use veal chops instead or pork chops. Serve the pork with homemade apple sauce instead of store-bought. To make it, place 2 lbs. of apples (Macintosh work well), peeled, cored and sliced into a pot with 1/2 cup water, 1/4 cup sugar, or to taste, 1 Tbsp. lemon juice and a pinch of cinnamon and nutmeg. Gently simmer until apples are very tender. Mash with a potato masher or pulse in a food processor to a sauce-like consistency. Serve sauce, warm or cold.

Serving Suggestions

Keep the simple theme of this dinner going by serving the pork with equally easy to prepare side dishes, such as steamed asparagus or broccoli and baby carrots, and boiled and butter mini new potatoes accented, if desired, with chopped fresh parsley, green onion or mint.
