Pour oil in a medium-sized pot and set over medium heat. Add the onion and cook 2 minutes. Add rice and garlic and cook 2 minutes more. Pour in the stock, increase heat to high, and bring to a rapid boil. Cover the rice, reduce the heat to its lowest setting, and cook, undisturbed, for 35 minutes, or until the rice is tender. Fluff the rice with a fork, mix in the mint, and serve.
Instead of basmati rice, use brown jasmine rice in this recipe. Instead of mint, try another chopped fresh herb, such as basil or cilantro. For added richness and texture, mix 1/2-cup of whole almonds into the rice when first bringing to a boil.
