Method

  1. Divide lime juice and mint leaves between two tall 12-oz. glasses. Stir and muddle to release the flavour of the mint. Pour 1 1/2 to 2 oz. of rum into each glass.
  2. Add 1/2 cup of ice cubes to each glass; add a half grapefruit slice and some fresh berries in each glass. Add the remaining ice cubes. Pour 1/2 cup Italian soda into each glass. Top up each drink with club soda. Garnish each drink with a mint sprig and lime slice and serve.

Recipe Options: Instead of grapefruit, add sliced oranges to these cocktails. When available, add a few pomegranate seeds to each mojito when adding the berries. To make this drink, non-alcoholic, simply omit the rum and replace with a bit more Italian soda.
