  1. Preheat barbecue until about 375˚F in the chamber. Trim a 1/2-inch off the top of each garlic bulb. Set garlic in an small barbecue safe pan, cut side up. Drizzle 1 Tbsp. of the oil on the garlic, season with salt and pepper, and set a rosemary sprig on top of each one.  
  2. Set the garlic on one side of the barbecue, and turn the heat off underneath it. Leave the other side of the barbecue turned on. Closed the lid, and cook garlic 30 minutes, or until the cloves soften and begin to push out the top. 
  3. Remove garlic from the barbecue. Brush the pita bread with remaining oil and grill over the flame until nicely coloured on both sides. Cut pita into wedges.  
  4. Set the cheese on a serving board with the garlic and pita nearby. Allow diners to spread the cheese on the grilled pita, top with garlic, and enjoy.
