Place all ingredients in a bowl and whisk to combine. Transfer to zip-lock bag and pack with your dry, camping foods.
To make pancakes, place the egg and water in a bowl and whisk well to combine. Now mix in the zip-lock bag of pancake mix until a batter forms. Let batter rest 5 minutes, and then gently stir again.
Set a skillet over medium, medium-high heat and coat the bottom of it with vegetable oil or vegetable oil spray. When hot, ladle in 1/4-cup amounts of batter into the pan. Flip the pancakes when the tops become speckled with bubbles. Cook 1 minute more, or until the centre of the pancakes spring back when touched. Cook the remaining pancake batter in this fashion. Serve pancakes with butter, maple syrup and, if desired, a fresh fruit, such as blueberries.
