Set two large skillets over medium to medium-high heat. Divide the oil among them.
Divide the mushrooms, zucchini, bacon, bell peppers and garlic between the two skillets and sauté until the mushrooms are tender and any moisture has evaporated. Cool to room temperature.
Preheat the oven to 350 degrees F. Grease a 9"x13" baking dish with vegetable oil spray. In a large mixing bowl, beat the cream cheese and cream until well combined (don’t worry if it’s not exactly smooth). Whisk in the eggs, salt and pepper, herbs. Stir in the vegetable mixture, bread, green onion and half the cheese.
Spoon this mixture into the baking dish. Sprinkle with remaining cheese. Bake, uncovered, for 45 to 50 minutes, until golden and puffed in the centre. Let the strata stand 5 to 10 minutes before cutting and serving.
