Arrange the cucumber rounds on a serving platter. Top each with a teaspoon of the goat cheese. Top the goat cheese with a slice of the salmon. Sprinkle the salmon with a little freshly grated lemon zest and pepper. Garnish each with a small dill sprig and serve.
Recipe Options: Instead of cucumber slices, set the goat and salmon on a gourmet cracker or small round of pumpernickel bread. Instead of candied salmon, top the goat cheese with small slices of cold smoked Salmon (lox). Instead of goat cheese, try another creamy cheese, such as Boursin or spreadable cream cheese.
