Method

Preheat the oven to 325 degrees F. Beat the butter and sugar until light. Mix in the vanilla and then the eggs one at a time. Stir together the flour and baking soda, and then mix in to butter/sugar mixture. Mix in cashews and raisins. Roll the dough into 2-inch round balls. Place on a non-stick or parchment-lined baking sheet, spacing 2 to 3-inches apart. Bake 18-20 minutes, or until puffed and golden.
