Heat the oil in a wok or large skillet set over medium-high heat. Add the chicken and stir-fry 4 to 5 minutes, or until cooked through. Add the bell pepper, celery, carrot, garlic and ginger and stir-fry 2 minutes more. Add the remaining ingredients, stir-fry 2 to 3 minutes more, and serve.
Recipe Options: Instead of boneless, skinless chicken thighs, use slices of boneless, skinless chicken breast or make cashew pork by replacing the chicken with an equal weight of pork tenderloin, cut into thin strips. Unsalted, roasted almonds or peanuts can be used in place of the cashews.
