Preheat the oven to 350 degrees F. Heat the oil in a skillet over medium heat. Season the chicken with salt and pepper; coat in the flour, shaking off the excess. Brown the chicken on all sides and then set in a casserole. Add the onion, bell pepper, carrot and garlic to the skillet and cook 3-4 minutes. Mix in the remaining ingredients and bring to a simmer; spoon over the chicken. Cover and bake 60 minutes, or until the chicken is cooked through.

Serving Suggestions

Pasta is the perfect partner for this dish, whether it's long and narrow linguini, or short and stocky rigatoni. A simple side salad would also make a nice accompaniment; such as chopped head lettuce topped with crisp, slices of raw vegetables and drizzled with vinaigrette dressing.
