Preheat the oven to 375 degrees F. Line a 9" x 13" baking pan with parchment paper. Pour the oil into a large skillet set over medium-high heat. Season the chicken with salt and pepper, add to the skillet and cook 3 to 4 minutes per side, or until just cooked through. Transfer the chicken to the baking pan. Top each piece of chicken with 2 slices of ham. Top the ham with a slice of Brie. Bake for 8 to10 minutes, or until cheese is melted and the ham is heated through.
