  1. Combine the salsa ingredients in a medium bowl. Cover and refrigerate until the chicken is ready.  
  2. Preheat barbecue or indoor grill to medium-high. Combine the 2 Tbsp olive oil, lime zest, chili powder, salt and pepper for the chicken in a shallow bowl. Add the chicken and turn to coat. 
  3. Grill chicken 3 to 4 minutes per side, or until cooked through. Serve chicken with the salsa.

Recipe Options: Use large, boneless chicken thighs or bone-in or boneless pork chops instead of chicken breast. Don't eat meat? Then serve the salsa alongside grilled salmon or halibut. Or use a dip or topping for taco chips or quesadillas.

Serving Suggestions

Create a Tex-Mex style meal by serving the chicken and salsa with such things as tortillas or taco shells, grated cheese, sliced jalapeños, sour cream and cilantro.
