Combine the salsa ingredients in a bowl; store in the fridge until the chicken is ready. Preheat the grill to medium-high. Combine the oil, lime zest, chili powder, salt and pepper in a bowl. Add the chicken and turn to coat. Grill 3-4 minutes per side, or until cooked through. Top the chicken with a generous spoon of the salsa and serve the rest alongside.

Serving Suggestions

Serve the chicken with a salad made by topping chopped head or leaf lettuce with cubes of avocado, ripe tomato, red onion and cucumber. Make a simple vinaigrette to drizzle overtop the salad by mixing 1 1/2 ounces of lime juice with 1/4 cup vegetable oil. Sweeten with honey to taste; season with salt, pepper and pinch of ground cumin.
