Preheat the oven to 325 degrees F. Heat the oil in a skillet over medium-high. Season the pork with salt and pepper; brown on all sides. Set in a roasting pan just large enough to hold it. Combine the remaining ingredients in a bowl; pour over the pork. Cover and roast 2-1/2 hours, or until the pork is very tender. Remove the pork from the liquid and rest 10 minutes before slicing. Skim the fat from the braising liquid and serve alongside the pork.
