Method

  1. Grease 8" square baking pan with oil spray. Cut an 8” x 12" piece of parchment paper to fit the bottom and up 2 of the 4 sides of the pan. (The parchment on the sides of the pan will later be used as handles to lift square out when baked.) 
  2. Preheat oven to 325°F. Combine eggs, sugar and vanilla in a medium bowl. Mix in 1/2 cup melted butter. Now in mix flour, baking powder and salt.
  3. Pour half (1 cup) of this batter into a second bowl. To that batter, mix in the coconut. To the other half of the batter, mix in the cocoa powder and 1 Tbsp. melted butter.
  4. Spoon and evenly spread the chocolate batter into the pan. Now spoon and spread the coconut batter on top of the chocolate batter, being careful not to blend the two. 
  5. Bake the square 30 minutes, or until just set, but still a little jiggly in middle. Set on a rack and cool to room temperature. 
  6. Place the chopped chocolate and 3 Tbsp. butter in a heatproof bowl and set over simmering water. Heat and stir until the chocolate has melted and blended with the butter. Spoon and spread this mixture evenly on the square. Refrigerate square until the chocolate mixture is set. Now cover bar and keep refrigerated until ready to serve. 
  7. To serve, let square warm at room temperature a few minutes to soften the chocolate layer. Run a knife around the outside of the square to loosen it from the pan. Grab onto the parchment and lift the square out and onto a cutting board. Trim the edges of the square to make clean edges and cut into 24 bars.

Recipe options: For a double taste of coconut, after spreading on the melted chocolate mixture, sprinkle the square with a bit of unsweetened coconut flakes. Now cool the square, to set that chocolate, and then cut into bars as described in the recipe.

Serving Suggestions

These bars are great to bring to a potluck, office party, or a bake sale. You can make them a day before needed, cut them into bars, set them on a serving tray, tent with plastic wrap, and keep them refrigerated until ready to serve.
