Method

Serving Suggestions

  1. Combine first 8 ingredients in a small bowl. Set the roast on a wide plate. Sprinkle with the coffee mixture and firmly rub it into the meat. Let roast sit at room temperature 30 minutes.
  2. Preheat oven to 425°F. Set a rack over a roasting pan and lightly coat with oil spray. Set the roast on the rack. Roast the beef to the desired doneness, about 30 to 35 minutes for rare to medium rare. (Because roasts can vary in thickness, always use an instant-read meat thermometer to gauge doneness and remember the meat continues to cook while it rests. A rare roast is done at 120˚F; medium-rare will be 125˚F to 130˚F.)
  3. When cooked, set the roast on a clean plate, tent with foil and rest 10 minutes. Meanwhile, make jus by setting the roasting pan over medium-high heat. Add the 1/2 cup coffee, bring to a simmer, and scrape the bottom of the pan to lift off the brown bits. Add the stock and simmer a few minutes more.
  4. When the meat has rested, thinly slice and serve with a sauceboat of the jus.
