Combine the salad ingredients in a medium bowl. Cover and store in the fridge until the lamb is ready. Preheat your grill to medium-high. Combine the olive oil, cumin, coriander, paprika and garlic in a shallow dish. Add the lamb and turn to thoroughly coat with the mixture. Season the lamb with salt and pepper. Grill the lamb 3 to 4 minutes per side, or until the desired doneness is achieved. Serve 2 lamb chops per person with the cucumber salad alongside.
