Method

Combine the salad ingredients in a medium bowl. Cover and store in the fridge until the lamb is ready. Preheat your grill to medium-high. Combine the olive oil, cumin, coriander, paprika and garlic in a shallow dish. Add the lamb and turn to thoroughly coat with the mixture. Season the lamb with salt and pepper. Grill the lamb 3 to 4 minutes per side, or until the desired doneness is achieved. Serve 2 lamb chops per person with the cucumber salad alongside.

Serving Suggestions

The lamb chops and cucumber salad would go well with steamed or boiled mini new potatoes tossed with touch of extra virgin olive oil and lemon juice, and steamed or boiled mini carrots, tossed with honey and a sprinkle of cinnamon and nutmeg.
