Combine the first four ingredients on a wide plate. Brush and evenly coat the pork with the mayonnaise. Set the pork on the cornflake mixture, turning to coat and gently pressing the crumbs on to help them adhere. Heat the oil in a large, non-stick skillet over medium to medium-high heat. Add the pork and cook 3 to 4 minutes per side, or until golden and cooked through. Serve each pork cutlet with a generous spoonful of the applesauce alongside.

Serving Suggestions

Serve a colourful mix of simply prepared vegetables with the cutlets, such as frozen kernel corn, heated and buttered; boiled mini red new potatoes tossed with chopped fresh dill; and steamed broccoli drizzled with lemon juice.
