Method

Coat the snapper in flour, shaking off excess. Dip in egg mixture, making sure the fish is well coated. Dip into crust mixture, gently patting on. Heat the oil in a large skillet over medium-high heat. Fry the snapper about
3-4 minutes per side or until nice coloured and cooked through. Serve fish with flavoured mayonnaise alongside.

Serving Suggestions

Serve steamed rice and a stir-fry of bell peppers, celery and onion with the snapper.
