Method

Place the stock, orange juice, olive oil and garlic in a medium-sized pot and bring to a boil. Mix in the couscous, pistachios, dates, mint, salt and pepper. Return to a boil, cover, remove from the heat, and let stand 5 minutes. Fluff the couscous with a fork to separate the grains and then serve.
