Method

Combine the crab, mayonnaise, green onion, salt, pepper and lemon juice in a bowl. Spread one side of the bread slices with butter. Top 2 of the butter sides with lettuce. Spread the crab mixture on the lettuce; top with tomato, avocadoes and remaining bread slices, butter-side down. Cut the sandwiches in half or quarters and serve.

Serving Suggestions

Serve these sandwiches with a simple mixed green salad or selection of crisp, raw vegetables, such as cherry tomatoes; cucumber, carrots and celery sticks; and broccoli and cauliflower florets.
