Crispy Crusted Oysters with Lime Cilantro Mayonnaise

Drain oysters well. Coat in flour,
shake off excess, and then dip in egg mixture making sure they are well coated. Dip into crust mixture, carefully pressing the mixture into the oyster to make sure it's well coated. Heat about an 1/8 of inch vegetable oil in a large skillet over medium-high heat. Fry the oysters for about 2 minutes per side. Keep oysters warm in a 200 degree F oven until you have finish frying them all. Serve mayonnaise along side the oysters. A crisp mixed green salad would make a nice accompaniment. These oysters would also create a delicious oyster burger.
